Sugar Free Pumpkin Spice Cookies

Easy to make the sugar free Pumpkin spice cookies.


  • 2  1/1 cups of flour
  • 1 tsp. of baking soda
  • 1 tsp. of baking powder
  • 1 1/2 tsp. of ground cinnamon
  • 1 tsp. of ground nutmeg
  • 1/2 tsp. of salt
  • 1 1/2 cup of erythritol
  • 1 cup of softened butter
  • 2 cups of pure sugar-free pumpkin
  • 1 large egg
  • 1 tsp. of vanilla


  1. Combine all dry ingredients together in a small bowl, fully combine together.
  2. Cream butter and erythritol in a medium-sized bowl until fully combined.
  3. Beat in vanilla, egg, and pumpkin until smooth.
  4. Gradually beat in flour mixture.
  5. Drop rounded tablespoon of dough on parchment paper lined baking sheets.
  6. Bake for 15-18 minutes at 350 degrees F. Until edges are firm.
  7. Let cool on baking sheets for 2 minutes.


Mix all the dry ingredients, add the wet ingredients, drop your dough on parchment paper. Bake it and enjoy the sugar-free Pumpkin spice cookies and share with friends.
