First step in creating these wonderful fall delights is gathering all the ingredients together.
Next, combine all dry ingredients together in a small bowl.
Mix all the dry ingredients together fully with a whisk.
Cream, butter and erythritol together in a medium sized bowl until fully combined.
Creamed together, it should look something like this.
Now add in the vanilla.
Then your one egg.
Add then thirdly, add in the pumpkin pure.
Mix on medium until all ingredients are completely combined.
At this point the batter will look similar to this.
Now its time to slowly add in the flour, a cup at a time, while mixing on low.
Now our batter will look full and smooth like this.
Drop rounded tablespoon of dough onto parchment paper lined baking sheets.
Bake for 15-18 minutes at 350 degrees F. Until edges are firm. Let cool for two minutes on the pan.

Ingredients
- 2 1/1 cups of flour
- 1 tsp. of baking soda
- 1 tsp. of baking powder
- 1 1/2 tsp. of ground cinnamon
- 1 tsp. of ground nutmeg
- 1/2 tsp. of salt
- 1 1/2 cup of erythritol
- 1 cup of softened butter
- 2 cups of pure sugar-free pumpkin
- 1 large egg
- 1 tsp. of vanilla
Instructions
- Combine all dry ingredients together in a small bowl, fully combine together.
- Cream butter and erythritol in a medium-sized bowl until fully combined.
- Beat in vanilla, egg, and pumpkin until smooth.
- Gradually beat in flour mixture.
- Drop rounded tablespoon of dough on parchment paper lined baking sheets.
- Bake for 15-18 minutes at 350 degrees F. Until edges are firm.
- Let cool on baking sheets for 2 minutes.
